Paglierino is a medium matured pecorino, cave-aged for around 3 to 4 months. It is made with milk from sheep grazing in the National park of Cilento and the Valley of Diano. The flavour is balanced and gentle – slightly sweet, nutty, grassy flavours coming from the rich sheep’s milk with a mild, savoury finish. The interior is the colour of light straw, which is how the cheese gets its name (paglierino translating to straw). Casa Madaio are artisan cheese-makers and affineurs. Their cheeses are aged in caves located in the National Park of Cilento and Vallo of Diano, and have been used by the family to mature cheese for 4 generations.
Other Notes & Serving Suggestions
A delightful young pecorino to enjoy with acacia honey or pear jam on a cheese platter. It can also be shaved into a mixed leaf and pear salad, or served with grilled vegetables on an antipasti platter. Pair with Pinot Grigio, Pinor Noir, Montepulciano and Sangiovese.
